These thick and chewy noodles coated in a creamy, nutty sauce will have you saying "udon know how much I love this!" They are typically cooked until they are soft and tender, and then tossed with a sauce made from peanut butter, soy sauce, rice vinegar, garlic, and ginger.

Ingredients:
360g Udon Noodles
1 Medium Onion, sliced
1 Medium Carrot, sliced
2 Cups Cabbage, sliced
1 Pepper (Red, Yellow, Orange), sliced
8 oz Mushrooms, sliced
4 Scallions/Spring Onions, chopped
4 Garlic Cloves, minced
1 Tbsp Fresh Ginger, minced
1 – 2 Limes
2 - 3 Tbsp Extra Virgin Olive Oil
Peanut Sauce:
4 Tbsp Smooth Peanut Butter
3 Tbsp Dark Soy Sauce
3 Tbsp Sesame Oil
1 Lime, Freshly Squeezed
2 tsp Caster Sugar (or Sugar Substitute)
Toppings (Optional):
Handful of Peanuts (Unsalted or Salted)
Sesame Seeds
Chili Flakes
Directions:
Over medium heat, add the Extra Virgin Olive Oil and the Onions. Sauté for 3 – 4 minutes.
While the Onions are cooking, bring a pot of water to a boil and add the Udon Noodles. Let them cook for 8 minutes or until Noodles are at there desired texture.
Add the Mushrooms, Garlic, Ginger, Carrots, Cabbage, and Red Pepper. Sauté for another 4 – 5 minutes.
Combine the Peanut Butter, Soy Sauce, Sugar, Juice from 1 Lime and Sesame Oil.
Add the Sauce and Noodles to the pan. Sauté for 3 – 4 minutes
Remove the pan from the heat. Stir in Scallions/Spring Onions.
Top with Crushed Peanuts, Sesame Seeds, and Chili Flakes.
Add a slice of Lime to each serving.
